about 28% of that of sucrose

lower than that of sucrose and higher than that of high fructose

the structure of stachyose isα-configuration and can be decomposed into byα-gala- glycosidase. But there is no such enzyme in human gut. Therefore, human gut can not digested stachyose. After intake of stachyose and raffinose, it will go through gastric and intestinal tract and go directly into colon, where there are bifidobacteria and other probiotics that can utilize these oligosaccharides as nutrients.
* Anti-starch retrogradation capacity
a strong inhibitor which may prolong the shelf-life of starch-containing products.
